Ingredients20 Baking potatoes

800g Cheese

1400g Baked Beans

800g Maggi R&R
230g Chopped tomatoes
1 Red pepper (fresh,diced)
1 Yellow pepper (fresh,diced)
1 Green pepper (fresh, diced)
2 Large red onions
500g Courgettes (diced weight)

Method1. Scrub, clean and remove any eyes from potatoes
2. Make a crossed incision in centre of each potato
3. Place the potato on a tray and bake in oven for approximately 1.5hrs hours until soft

4. Heat beans until reaching temperature above 82 C

5. Dice onions, peppers and courgettes into large chunks
6. Quarter tomatoes, deseed and half each quarter
7. Place all vegetables on a baking tray and mix together.
8. Bake in the oven until slightly roasted
9. Transfer to gastronorm and spoon Maggi sauce into the roasted vegetables as you don't want it to be too wet.
10 Heat through to temperature

11. Add the ratatouille, beans or cheese filling to the baking potato when ready to serve
