Ingredients1000g Carrot cake mix
300g Grated carrot
100ml Oil
450ml Water
1 Orange (rind and juice)
Method1. Grate rind of orange and set aside
2. Squeeze juice of orange into a measuring jug and make up to 450ml with water
3. Make up carrot cake mix as per manufacturer's instructions
4. Gently fold in the orange rind
5. Divide equally into 48 fairy cake cases
6. Bake until ready
